Stroke Awareness Month

For Tasty Tuesday, we are going to tie in stroke awareness! Now why in the world is the 30-something year old talking about strokes? Because I had MULTIPLE strokes and all because of my traumatic brain injury! The more serious one was the pontine stroke as they thought my pons detached. But I digress!


Strokes continue to be the leading cause of death and disability, as stated by the Flint Rehab Center in Michigan. MOST of the things that can prevent a stroke are all things we can choose to do. For example; eating healthier! Having a healthy lifestyle in general can help prevent YOU from having a stroke.


With me, I have a decently higher risk of having another stroke. So I choose a healthier lifestyle and meet with nutritionists because let's face it, all of my stokes nearly killed me and I want to see all of my kids graduate!


Onto our dish for today! I am going to shake things up a bit today and start with HOW each ingredient is good for you. Can you guess what it is?


  • Tuna is a rich source of omega-3 fatty acids, particularly EPA and DHA. These fatty acids have been shown to support cognitive function, improve memory, and reduce the risk of dementia. 

  • Antioxidants in tomatoes, such as lycopene, may protect against Alzheimer’s disease.

  • Red onion helps to sharpen your focus and concentration. If you feel tired by lunch, cut up a red onion and add it into your lunch to keep you sharp for the rest of the day!

  • Quercetin is found in apples and it protects your brain from damage caused by oxidative stress.

  • Lettuce helps with the overall health of your brain but plugs in and improves your memory.
