Simple Breakfast Skillet!

This is truly the easiest "recipe" or idea you can create!
All it is are eggs, veggie of choice, and/or meat of choice!

Let us start with some extra virgin olive oil, also known as 'evoo'. EVOO is beneficial for brain health, potentially reducing the risk of dementia and improving cognitive function, especially in individuals with mild cognitive impairment. It is also researched and shown that it enhances brain connectivity and improves blood-brain barrier function.
Now we roll into eggs (again!). Eggs are super beneficial and have a number of proteins that are helpful with improving your brain health. The number one guy we hear about A LOT is choline. This nutrient is essential for brain cell communication and memory. It also has vitamins B6 and B12 which play a role in brain metabolism and neurotransmitter production. They also have antioxidants that protect brain cells from oxidative damage; that are called 'lutein' and 'Zeaxanthin'. Lastly, another great nutrient in an egg is selenium. This mineral supports brain function and cognitive flexibility.
Now let's scoot over to veggies! For this I picked out some of the 'more common' veggies. But if you choose to try something else, look it up to see it's health benefits for the brain! Starting off the list is broccoli and asparagus. These two are rich in essential vitamins, minerals, and antioxidants that can support cognitive function and reduce the risk of cognitive decline. Next are mushrooms and zucchini. Mushrooms, particularly certain varieties like Lion's Mane, are rich in nutrients and compounds that may support cognitive function, nerve growth, and protect against neurodegenerative disease. Zucchini provides essential nutrients like B vitamins, fiber, and antioxidants that are beneficial for overall brain health and cognitive function. The last two veggies I picked are green peppers and onions. I know, not everyone's favorites, but I love to add them into my eggs! Plus green peppers are a good source of vitamins and antioxidants, including vitamin C and vitamin B6, which are beneficial for brain function and may help reduce the risk of age-related cognitive decline. Onions, particularly red onions, are rich in flavonoids and antioxidants like quercetin, which may help protect brain cells and improve blood flow to the brain. See, I saved the best for last!
Up next, let's look at meat! If you are not an omnivore you may stop here. No need to keep going! Everyone else, read along! Meat that you can add, or example, are shredded chicken and smoked salmon. Shredded chicken can be beneficial for brain health due to its rich content of essential nutrients like protein, vitamins, and minerals. Chicken, especially shredded, is a good source of protein, including al nine essential amino acids, which are crucial for brain function and the production of neurotransmitters. It also provide B vitamins, particularly B12 and B6, which play a vital role in energy production, DNA synthesis, and overall brain health. Additionally, chicken is a source of choline, zinc, and iron, all of which are important for brain function and cognitive performance. Smoked salmon is beneficial due to its high omega-3 fatty acid content, particularly DHA and EPA. Omega-3s are essential for brain function, cognitive health, and potentially reducing the risk of age-related cognitive decline. Now other meat options that would be SUGGESTED are chicken sausage links and turkey bacon. These MAY be healthier to consume if you're watching the waistline, but there is NO research to show that these are beneficial to the brain. In fact, with the chicken sausage links, you want to be careful due to the amount of preservatives they may pack. Look at the sodium level and unhealthy fats. IF you use this as a meat option, please do so in MODERATION!
